Tasting notes

Deep, resinous and quiet. Seven years of slow fermentation have taken the edge off entirely, leaving camphor, old wood and a sweetness that arrives late and stays.

How to brew

Aged tea needs two rinses. 5–6 g, 95–100 °C, quick pours; 8–9 infusions then simmer.

Rinse once with 95–100 °C spring water before the first infusion (twice for aged tea and pressed bricks). Traditionally simmered, the cup shows deep chestnut brown — faintly astringent, never bitter — and tastes best at 80–85 °C.
