Deep chestnut-brown liquor, thick and re-steepable, faintly astringent and never bitter, with a long returning sweetness.

How to brew

Best appreciated at 80–85 °C, in the traditional simmered style.

Rinse once with 95–100 °C spring water before the first infusion (twice for aged tea and pressed bricks). Traditionally simmered, the cup shows deep chestnut brown — faintly astringent, never bitter — and tastes best at 80–85 °C.
